As a busy mother, sometimes time gets away from me. I’m sure you can relate - you left a loaf of bread forgotten in the cabinet, and it has completely dried out. Before you panic, DON’T throw it away! This açaí berry french toast casserole, made with Organic açaí berries from Sambazaon, is here to save your loaf of homemade bread.
Açaí berry french toast is the perfect combination of a special sweet breakfast and the superfood antioxidants that organic açaí berries offer. Sometimes, a morning is made better with sourdough bread and maple syrup—the nourishing benefits of açaí berries just send it over the edge of perfection!
RECIPE:
French Toast Bake:
1 loaf of sourdough bread (fresh OR stale)
6 eggs
2 cups milk
1 tbsp vanilla
1 stick butter
½ cup brown sugar (packed)
2 packs of Sambazon Frozen Açaí Blend
½ cup heavy cream
Powdered sugar for topping (optional)
Blueberry Syrup (Optional):
1 pack of Sambazon Frozen Açaí Blend
1 cup maple syrup
METHOD:
Preheat oven to 425°F.
Cut your loaf of bread into 1” cubes. Set aside.
In a small sauce pan, add the butter and brown sugar. Cook over medium heat until it is bubbly and the sugar has dissolved. Be careful not to burn it!
Meanwhile, in a medium-sized bowl whisk together your eggs, milk, and vanilla extract. Set aside.
In a small bowl, whisk together 2 packs of Sambazon Frozen Açaí Blend with your heavy cream. Set aside.
In a 9”x13” pan, evenly spread out your brown sugar mixture. Evenly place the cubed bread on top. Pour the egg mixture over the bread, making sure that every piece of bread is saturated with the mixture. If desired, you can pause at this step and refrigerate the casserole overnight to bake the next morning.
Lastly, pour the acai berry mixture on top. Do not mix it in.
Bake for 25-35 minutes, just until the center of the casserole has set.
While the casserole bakes, whisk your açaí berry pack and pure maple syrup together.
After baking the casserole, sprinkle it with powdered sugar and serve warm.
